Cooking with Asafoetida
Hing adds a distinctive savoury aroma to cooking. Start with a culinary product whose ingredients and directions you understand, especially when comparing different strengths.
Explore compounded hingUse the right form
Follow the directions on your pack. A small culinary quantity of compounded hing is different from the same measured quantity of concentrated resin.
When adding a seasoning to hot oil or ghee, keep the ingredients ready and avoid burning the spice. Stir it into the dish rather than judging its flavour only from its raw aroma.
Cooking without onion or garlic
Asafoetida can be an option for adding savoury flavour when a recipe leaves out onion or garlic. Monash lists asafoetida powder among flavour alternatives.
That culinary use does not mean every hing product or recipe is certified for a particular diet. Check the formulation and the other ingredients in the complete meal.
Substitution works in two directions
Using hing in an onion-free recipe is a different question from replacing hing when you do not have it. There is no universal strength conversion between different products.
Choose a substitute that fits the recipe and the reason an ingredient is being avoided. Do not introduce onion or garlic into a dish intended to exclude them.
